And, here's Wendy's recipe for those
wonderful ginger sweet potatoes with

Gingered Sweet Potato and Cider, Ontario

2 1/2 pounds sweet potatoes
4 cups apple cider
1/4 cup fresh ginger, peeled and minced
2 tablespoons butter
salt and freshly ground pepper to taste

Roast sweet potatoes for an hour at 400 F,
when cool, peel and cut into chunks.

While the potatoes are roasting, bring the
cider to a boil and reduce it to one cup,
it will thicken a fair bit. When this is
done and the potatoes are cut into chunks,
put all the ingredients into a food
processor and process with the S blade
until smooth. Adjust the seasonings and
serve as a side dish. This should make 6
side servings.
